From cup to calling
Paul Rowzee didn't set out to build a catering company. He set out to build the kind of coffee experience he wished existed — one that felt less like a transaction and more like the cafés he'd fallen in love with in Italy. Slow mornings. Real conversation. A drink pulled by hand, served with intention.
That idea became Latte'Da — a fully-electric, fully-mobile espresso and breakfast bar built to bring a piece of la dolce vita to weddings, offices, sports fields, and anywhere else in Colorado worth a great cup.
The Italian influence
Paul's approach is unapologetically Italian. Espresso is short, hot, and pulled fresh. Milk is textured, not steamed to death. Pastries are scratch-made and warm. There's no drive-through mentality here — every drink is built one at a time, the way it's done in Rome, Florence, and every family-run bar in between.
That philosophy extends to the whole menu: Sicilian-tradition gelato, breakfast confections, and a rotating seasonal menu that changes with what's good right now.
Built for Colorado
Paul designed Latte'Da specifically for the Front Range: quiet electric power (no generators, no smell), commercial La Marzocco equipment, organic milk, and beans from local roaster partners. That means we can set up anywhere — a mountain venue, a downtown office lobby, a schoolyard, or a backyard — without the noise or fumes that come with propane-powered rigs.
